Manuel Ebner is a young artist who is dedicated to researching traditions, customs and habits of the Oltradige viticulture. Some are ancient and nearly forgotten, and he transports them to the present day. His atelier is the kitchen, a research laboratory where he experiments with aromas, salts and oils. Manuel re-proposes ancient eating habits, giving them a personal touch. Based on genuine ingredients like South Tyrol itself, he creates new and unusual interpretations of taste. By combining the most diverse ingredients, he creates dishes with a surprisingly different flavour, right from the very first bite! These whimsical and unconventional creations are also characterized by their great digestibility, a pleasant sense of satiety and sustainable quality. Sometimes Manuel plays with fire and smokes everything that comes to mind, with wood that is full of resin or dry, old and young, aromatic and fruity. His passion? The garden of meticulously cared for aromatic herbs. An explosion of aromas, an intoxication of colours, a paradise of biodiversity, the showstopper of every dish.
