The fresh meat comes exclusively from bovine of mountain farmers from around Terlan. Butcher Stefan Nigg knows the mountain farmers for decades and knows about the high quality of the meat. He believes that only from healthy animals you get healthy food and he wants the “flavor of the pasture” contained in its products. Weekly cattle are slaughtered and processed according to old craftsmanship that continues in the butchery. Some of the products are also produced by organic criteria “Bioland”.
